Whole Wheat Bread
Makes 1 very large loaf or 2 small loaves
2 1/2 cups warm water
1 1/2 T dry active yeast
3 1/2 cups whole wheat flour
1 t salt
1/3 cup unsweetened applesauce
1/3 cup honey, sugar or maple syrup
1 1/4 TBSP lemon juice
2 1/2 cup whole wheat flour
Mix together yeast and water and allow the yeast to sit for a few minutes. Add 3 ¾ cup flour to yeast mixture and let sit for 10 minutes. Mix together the salt, applesauce, honey, sugar or syrup, and lemon juice and mix for one minute. Add the remaining flour, a little bit at a time, mixing well each time. Stir well with wooden spoon until dough pulls away from the sides of the bowl. Use your muscles here and try to stir for a full 5 minutes!
Put into parchment paper lined pan or pans.
Pre-heat oven for one minute to lukewarm and then turn off, about 150 degrees. Let the dough rise in the warm oven for about 20 minutes or until dough reaches the top of the pan. Do not remove bread from oven; turn oven to 350 and bake for 25-30 minutes. Remove from pan(s) and cool on racks.
