PUMPKIN CHOCOLATE PECAN BARS
Ingredients
In separate bowl, mix the vanilla, apple sauce, agave, and pumpkin. Combine all together, stir well. Put in baking dish, and bake at 350 until toothpick comes out clean. Depends on the size of your dish, mine was a standard 9.5x11 l baking dish, about 45 min, but keep an eye on it, when center comes out clean with toothpick or fork, it is done. Once completely cooled, sprinkle with powdered sugar. Slice into 1/2x4 in pieces. Enjoy! I made these for Thanksgiving, they were a huge hit.

- 2 cups all-purpose flour
- 1 cup Vegan Mini Marshmallows
- 2 tsp Pumpkin Pie Spice Mix
- 2 teaspoons vanilla extract
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 2/3 cup Unsweetened Apple Sauce
- 1 1/4 cups Sugar in The Raw
- 3 tablespoons water
- 1 cup canned pumpkin
- 1/2 cup or so of 100% Cocoa bars (I used about 1/2 to 3/4 of the package.) Or use chocolate chips of your choice.
- 1 cup cocoa powder unsweetened
- 1 T Agave in the Raw Sweetener
- 1.5 cups sugar coated pecans (you can use unsweetened pecans or walnuts for a less sweet version or add a dash of extra sugar)
