This is such a great treat to keep on hand when you want "just a little something sweet". They are not so decadent that it blows your whole healthy day, but sweet enough to satisfy. Prunes are not only sweet and delicious, but a natural way to keep your body functioning the way it should. They are high in fiber and sorbitol and will aid in digestion.
Ingredients:
1 cup pitted prunes
1 cup roasted salted almonds
1/2 tsp pure vanilla extract
2 T pure cocoa powder
1 T of PB2 (or natural peanut butter)
2 T of sugar or your favorite sugar substitute (I used Splenda)
2 T of warm water
2.5 T of almond butter

1/4 cup unsweetened shredded coconut
1/4 cup toasted sesame seeds
Put all top ingredients in a food processor and process a few minutes until well incorporated, it's okay if you still have a few chunks of the almonds. If it needs a bit more water, just add a little bit at a time. The "dough" will be very sticky. Scrape the sides down and use a teaspoon to scoop out, then form into a ball. Roll balls in the shredded coconut, and/or the toasted sesame seeds. Put on parchment paper on tray and freeze for about 30 min, then store in refrigerator until ready to eat. The taste is a creamy chocolate and caramel flavor. This makes approx 20 balls. Approx 85 calories ea, and 6 net carbs. (made with Splenda)
