SEITAN CRUNCHY NUGGETS
This is a very versatile recipe. Change it up to suit your needs, and serve with a variety of dipping sauces.
Ingredients:1 pound Seitan broken off in chunks, or cut into bite size nuggets. Please view the seitan recipe on this page, or use your own. The batter is 2 T red wine vinegar 2 cups+- non dairy milk 3 T +-of your favorite flour, (I used unbleached white flour) 1tsp all purpose seasoning, or creole seasoning for a little extra kick. 10 oz Panko bread crumbs S&P to taste. Preheat oven to 400 degrees. In small bowl mix vinegar, milk, flour and seasoning. Add more or less, but make it about the consistency of a med thick pancake batter. Dredge each piece of seitan through the batter, then coat well with Panko in large dish. Put on baking sheet with parchment paper. Bake at 400 for 15 min each side turning once or as needed. Oven temperatures and times may vary. If you have an air fryer, these are EXCELLENT in the air fryer for about 17 min, shaking once. For basic Seitan recipe, click here.
Serve hot from the oven with your favorite honey mustard sauce, barbeque sauce, ketchup, or sweet and sour sauce. Great as a stand alone dish but use your imagination, it would be great added to many dishes. (To make seitan taste more like chicken nuggets, use an extra tsp of poultry seasoning in the batter. Enjoy.
