Nothing starts the day on a better note than some farm fresh eggs. In all honesty, any time of the day! I love to turn them into a veggie omelette, so I'm getting the nutrients I need to get through several hours. Use this recipe as your inspiration, and feel free to use the vegetables you like best. But this is a winning combination!
Ingredients
5 med size mushrooms diced
1 slice of yellow or white onion diced
1/4 of red or yellow pepper diced
1 cup of raw minced kale or spinach
S & P to taste

2 Eggs
1 slice of vegan cheese (optional)
Put all of the top vegetable ingredients in a small non stick pan. Put the heat on medium and put lid on. It will take about 5 minutes to soften the vegetables. Add a little water if necessary to keep it from sticking but it will probably not be necessary, as mushrooms let off a lot of water on their own. Once tender, drain off any excess water. With a fork, put your eggs in a bowl and whisk them well. Pour the egg mixture directly in the pan and give a quick stir to make sure eggs cover the whole bottom of pan. Place the lid back on the pan, turn the heat to medium low. Let cook like this for a few minutes until even the top of the eggs have solidified. If you wish to add the optional cheese, this would be the time. Place your slice of cheese (I use non dairy, but use what you like) on top, and flip the other half over it. Give it about a minute to melt the cheese, and then simply flip it onto your plate to serve. Please see video below. Enjoy!
