
Turning vegetables into fritters has quickly become one of my favorite meals. The choices are endless. This one is simple, the flavor mild, and just so easy to put together.
Ingredients;
3 cups of Napa Cabbage, sliced and diced
1/4 of small white onion diced
1/4 of small orange or red pepper diced
2 eggs beaten
2 Tablespoons of almond flour (or your favorite flour)
1/4 tsp garlic powder
1/4 tsp onion powder
S&P to taste
Combine all ingredients in large bowl. It is best to use your hands to really combine them well. Then drop into hot non stick pan. You may need to use a light spray of cooking oil. I first cover and cook for about 5 min on low medium heat just so the eggs start to set up and they are easy to flip. Once you can carefully flip them, cook over low heat until they reach your desired browness, mine took about an additional 5 minutes on each side. Serve with your favorite dipping sauce.
