This is a delicious seitan loaf with a Mexican twist. Easy to make, and you can use it in many recipes. Crumble it up for tacos, slice thinly for burritos, or add to a southwest stir fry with corn, onions, and red peppers.
Ingredients;
Dry Ingredients:
2 cups Vital Wheat Gluten (no substitutes)
1/4 cup Almond Flour
1/2 cup Nutritional Yeast
1 tsp all purpose seasoning
1 tsp chives
Wet Ingredients:
2 cups water with 2 packets of taco seasoning dissolved well
2-3 T of almond butter or peanut butter (creamy)
Optional: For a soft, more meatloaf texture add one can of white beans and blitz together..
Stir your dry ingredients together well, then combine with your wet ingredients, (if needed, blitz wet ingredients first in nutribullet) stir first with large spoon, then use your hands to combine well and form into a loaf shape. Do not knead.
Place into a med size pot with approx 5 cups simmering water, cover and simmer for one hour, flipping carefully half way through. After an hour, transfer roast into a casserole dish and pour 2" of the liquid into it. Liberally coat the top with taco sauce, and bake at 375 degrees for one hour, basting occasionally if needed to prevent the top from getting too dry.
Let cool for 10 min, then slice and serve. So delicious rolled up in a tortilla! Simba loved it too! This makes approx 6 large servings, 12 net carbs ea.
