Minestrone Soup
Ingredients:
1 large T of Better than Bouillon Vegetable paste
32 oz water
5 med potatoes peeled and largely diced
1 med onion peeled and diced
2 large carrots diced
5 large mushrooms, diced
1/2 green pepper diced
4 stalks of celery diced
2 lg handfuls of fresh spinach chopped small
1 Large Can of Crushed Tomatoes, or Diced Tomatoes
1 can kidney beans drained and rinsed
1 can cannellini beans drained and rinsed
2 cups No Egg Extra Wide Pasta Ribbons or any other pasta
In large pot bring water and bouillon to a boil, add celery, and carrots. Cook on low boil for 10 min then add the potatoes, onion, mushrooms, spinach, and pepper. Return to boil then simmer with lid on Everything should be diced up small except for the potatoes, I like to leave those a little bit larger. After 20-25 min the potatoes should be tender, then add the beans, Tomatoes, and pasta. Cook for about 10 more minutes adding some Italian Seasoning, salt, pepper, and garlic. Turn off heat, cover and let sit on the still warm burner for another 10 min, then stir and serve. Even better the second day.. I find the No Egg Extra Wide Pasta Ribbons at my local Publix grocery store. It is the store brand. Walmart also carries them, they are usually found on the bottom shelf beside the other egg noodles. This makes 6 servings, approx 395 calories ea.
