
There is nothing wrong with a little bread in your life now and again. I love bread! However if you are counting carbs, it is typically the first thing people give up, and it is the first thing they really miss. This delicious low carb (only 2 net carbs per slice) bread will help you with that craving. It is easy to make, and delicious.
Dry Ingredients:
1 3/4 cups Almond Flour
1/4 cup Coconut Flour
1 T Baking Powder
1 tsp Baking Soda
1/2 tsp Stevia
2 tsp Golden Flaxseed
Wet Ingredients:
3 Eggs whisked together
1 T Apple Cider Vinegar
1/2 cup water

1 packet of rapid rise yeast
1/4 very warm tap water
Preaheat oven to 350 F. (I used the convection oven setting, your time and temp may vary. Mix the yeast with the warm water and set aside. Mix dry ingredients together in a bowl. Whisk the eggs together. Add Eggs to dry mixture. Add the apple cider vinegar and water to mixture stirring as you go. Lastly add the dissolved yeast mixture. Stir well by hand or with mixer. Place in lightly sprayed or parchment lined bread pan and smooth out top. Bake at 350 degrees (convection oven) for 30 min. Check with toothpick to make sure it is done in the middle, if not keep checking it every 5 minutes. Let cool completely before slicing. I got 12 slices out of mine. This is a dense bread and it does not rise much at all, so if you are looking for a taller bread, double the recipe.
