Cowboy Caviar
A super easy side dish, great for summer picnics, a nice change from regular old salsa. Serve with your favorite tortilla chips. Simply combine all ingredients and stir well.
1.5 cans of drained corn or 2.5 cups frozen
1.5 cups frozen peas thawed, edamame, or avocado chunks (I use peas or edamame instead of avocado if I am not serving immediately as the avocado turns brown)
1/2 of a white onion diced
1/2 of yellow pepper diced
1 can drained and rinsed pinto beans
1 can drained and rinsed black beans
1/2 cup of your favorite salsa
1/2 tsp cumin
1/2 tsp chili powder
1/2 pkg of taco seasoning mix
3-4 T of lime juice
Refrigerate until ready to serve. This can be served hot, cold, or at room temperature, so it is great to take to a potluck party. I personally prefer it hot. This makes approx 5 large servings, 242 calories ea, 15 net carbs.
