This creamy delicious cashew cheese is a staple in my home. It is good on so many things, drizzled over some pasta, as a spread on a veggie sandwich, a nice thick cheezy layer in lasagna, it adds a special richness to any dish. I've eaten it simply as a dip for fresh cut vegetables with a dash of hot sauce. Plus it is so easy to make. You can change it up in many ways, this is the basic recipe.
Ingredients:
12 oz raw cashews, soaked for at least 30 min in hot water, then drained and rinsed
2.5 T lemon juice
1/2 tsp garlic powder
3/4 tsp onion powder
1/2 cup warm water
1/4 tsp salt
1/4 tsp pepper
1/4 tsp all purpose seasoning
Put all in blender and blend until smooth and creamy, my nutribullet took about 2 minutes. Some great additions to this depending on what you may be using it for are 2 T nutritional yeast, and/or 1/2 cup fresh basil. Enjoy!
