Some nights after working all day, I feel lazy. So lazy I know I am either going to reach into my freezer and heat up one of my many leftovers, or make something super simple. This is a perfect thing to make on those nights. It is so filling, and so delicious, Time to make is about 5 minutes.
1 large ripe avocado
1/2 tsp of lime juice
1/2 tsp dried chili peppers (optional)
Salt and pepper to taste
2 T of diced onion or scallions
1/4 cup of diced peppers
2 pieces of toast
2 T of basil pesto
De seed your avocado, and scoop out the deliciousness into a bowl. Add a touch of dried chili peppers if you like it a little spicy, a sprinkle of lime juice, salt and pepper. Using a fork, smash it all up to get the consistency you like. In the meantime, put your toast in the toaster until med brown.
Spread your smashed avocado on the toast, then sprinkle it with the diced onions, peppers, and drizzle the top with the Basil Pesto sauce. You can add a bit more salt and pepper if you like. Eat up! Makes one serving, approx. 450 calories depending on what kind of bread you use.
