A simple and delicious side dish. This is a very mild and creamy version designed to pair well with many other dishes. Feel free to spice it up to your own liking. A pinch of garlic and some crushed red pepper would be a nice addition. This would make an excellent layer to put in your vegetarian lasagna.
Ingredients:
4 cups chopped fresh kale ( I put in food processor and pulse about 5-6 times)
1 small onion diced
1 small bell pepper diced
1 tsp Mrs Dash Original
1 tsp freshly ground black pepper
Salt to taste

4-5 Tablespoons of Creamy Cashew Cheeze
Put all ingredients except for the cashew cheese in a med size saucepan with about 1.5" of water in the bottom. Simmer with lid on for about 20-30 min until good and tender. Remove from heat, drain off any excess water. Stir in the Cashew Cheeze and put back on burner for just a couple minutes to heat through. You can sprinkle a bit of nutritional yeast on top if you like. I enjoyed this with some of my delicious falafels. I hope you like it as much as I do.
DELICIOUS SUGGESTION: To turn this into more of a main dish, the last 10 minutes stir in a can of Northern White Beans (drain and rinse them first)
