The combination of beans and greens really satisfies. You can use any of your favorite beans and dark leafy greens, but this combination turned out so good. Today is New Years Day so I incorporated some blackeyed peas in mine for good luck.
1 small white onion
1 tsp minced garlic
1/2 small red pepper
1 large bunch of fresh kale, stem removed and chopped finely
4 cups of pre cooked beans, I used half black eyed peas, and half northern beans
S&P to taste
1/2 tsp Smoked Paprika
You can use canned beans in this recipe if you prefer, but it is so easy to make a big batch of fresh beans in advance, then you can eat what you want and freeze the rest. I made my beans in the slow cooker/crockpot the day before. 1.5 cups great northern beans, 1.5 cups black eyed peas, (makes about 6 cups cooked) cover in broth to 2" over beans, add a T of liquid smoke, and 2 bay leaves, cooked on high for 6 hours. I then just drained off the broth and store in refrigerator.
In large skillet, add your pepper, garlic and onion, over med high heat cook these until browned and caramelized, then add a 1/4 cup water. Bring to simmer, then add your kale, cook for about 2 min until wilted, then add your beans, and spices, stir well, cover and heat on low until heated through, about 10 min. Enjoy! Can be served as is, or over rice.
