Soup, Green Soup!
After a hard day at the office, I didn't want to put a whole lot of thought into dinner.. so this is what I did. I threw all of these ingredients in the pressure cooker for 13 minutes, natural release.
6 cups fresh spinach chopped,
5 cups chopped fresh mushrooms,
3 cups chopped fresh broccoli,
1 cup chopped white onions, 1/2 cup diced celery, and fresh from my garden I added two good sized green peppers diced small, a handful of fresh roughly chopped basil, a sprig of thyme diced, a sprig of oregano diced, and one lonely tomato that had ripened diced small (feel free to add more tomato), 5 green beans that looked ready to pick diced up, then I added a can of great northern beans drained and rinsed, one large peeled and diced russet potato, one small handful of elbow macaroni, 1tsp garlic powder, s&p, 1 carton of veg broth, and topped it all with some fresh scallions before eating. Just before serving I also added one half cup of unsweetened non dairy milk mixed with 2 T of corn starch whisked together well over the hot burner, (or right in the pressure cooker with lid removed) and stirred until a thin gravy was formed. (it took about 5 min) This simple soup turned out so darn tasty. It made quite a bit, enough for dinner and a few extra meals. I will enjoy it for lunch at work the rest of the week. It is one of those meals that taste so good, you forget you are eating something that is good for you, so enjoy.
