Baked Cauliflower taken to a whole new level. Oh, this was so tasty.
Ingredients:
1 whole head of cauliflower cut into med size florets

Batter:
1 cup rice flour
1/2 cup coconut milk lite
1/2 cup cashew milk
3 T pineapple juice
________
Coating:
1 cup Panko
1 cup Unsweetened Coconut Flakes
1/4 tsp of your favorite all purpose seasoning, or just salt and pepper to taste.
Arrange your station as follows, cauliflower florets, dipping batter, crunchy coating, parchment lined cookie sheet.
Dip each floret into the batter, roll into the crunchy coating then place carefully onto the baking sheet. Put larger pieces on the outside. Bake at 400 degrees F for approx. *20 min, turn, then another 15-20 min until golden brown and tender. Keep checking, oven temps vary and coconut can burn easily.
Dipping Sauce:
This stuff is amazing! If you like Piña Colada's, you will want to eat it with a spoon, but resist... it is a great dipping sauce.
In a blender combine, 1 cup drained pineapple, 1 cup unsweetened Coconut, and 1/2 cup coconut milk, and 1 T Agave. Blend well, and refrigerate until cold.
Enjoy this special treat. It is a bit higher in fat and calories than my typical recipes due to the use of coconut and coconut milk, but the flavor is so good, it is worth the occasional indulgence. Enjoy! Makes 3 servings, approx 440 calories per serving.
*To speed up baking time, you can pre boil the cauliflower florets for 5 min.
