I started making this deliciousness quite some time ago just to have something good to put on a sandwich. I wanted it to have the consistency of an egg salad or tuna salad, but was looking for something that was completely plant based. Step aside eggs and tuna! This is better than either of them in my opinion. I use a food processor to make short work of the prepping.
Ingredients:
2 cans of garbanzo beans, drained but not rinsed
1 medium carrot, cut in pieces
1/2 white onion
1/2 red pepper
2 ribs of celery
1 jalapeno pepper, seeds removed
____
2 tablespoons sweet relish
4 tablespoon +- of your favorite light mayo
1/4 cup of walnut pieces
pinch of sugar
S&P to taste
1 tsp poultry seasoning
1 tsp crushed chili pepper (optional)
In your food processor, put your carrot, onion, peppers, and celery. Pulse a few times to get them in little pieces. Dump into bowl. In the empty food processor (no need to wash) add your 2 cans of garbanzo beans. Pulse a few times until they are in little pieces. Do NOT overprocess this or you will end up with hummus. Add the smashed bean mixture to the bowl of chopped vegetables. Add the relish, mayo and walnut pieces. Stir well, and season with s&p, pinch of sugar, poultry seasoning, and any other seasoning that sounds good to you. The recipe as written has a nice crunch with the raw vegetables, and the jalapeno and crushed chili peppers give it a nice kick. Refrigerate for at least one hour before eating. This makes quite a bit, so it's great to take to a pot luck or picnic, and serve with crackers. Enjoy! This makes 6 large servings, approx 190 calories ea (not counting any bread or crackers)
