I almost did not write this one up because it was so easy that I figured anyone could do it without a recipe, but it turned out so good that I thought I would share anyway.
Ingredients:
1 acorn squash
1/8 tsp of Pumpkin Pie Spice
2 T of Maple Syrup
S&P to taste
1/4 cup chopped walnuts or pecans
Preheat oven to 400 degrees. Cut squash in half and remove the seeds. Sprinkle with a touch of salt and pepper, and the Pumpkin Pie Spice. Place face down on parchment lined cookie sheet with about a 1/4 cup of water poured on it. Bake for approx 30 min or until the squash is tender. Remove from oven. Turn heat up to 425 degrees. Turn squash right side up, and drizzle the maple syrup over the top, and sprinkle with the walnuts or pecans. Place back in hot oven for another 10 min or until lightly browned. It tastes like pumpkin pie to me. So delicious! .
