RED BEANS AND RICE
Sometimes, the simplest recipes taste the best. You can't go wrong with this comfort food.
Ingredients:
1 lb bag of Small Red Beans, Presoak the beans overnight
1 32 oz carton of Veg Broth or water, approx 2" over ingredients.
1 T fresh parsley,if using dry use about a 1/4 tsp
1 T fresh thyme, if using dry use about a 1/4 tsp
1T fresh oregano, if using dry use about a 1/4 tsp
1/2 chopped med onion
2 cloves minced garlic,
1 Cup Jasmine Rice (or your favorite rice)
1/4 tsp Chili Powder
1/4 tsp Cumin Powder
1/8 tsp Cayenne Pepper (optional)
S&P to taste
I cook mine in my XL Power Pressure cooker, (Man I love that thing!) Keep in mind the beans will take much longer if making on stovetop, couple hours likely, and rice usually about 15 min on stovetop.
First simmer onion, garlic, some veg broth, one Veg Bullion cube, for about 5 min while heating up unit, and then the beans and fresh spices at high pressure natural release for 20 min, check to make sure they are tender, bean should easily smash with a spoon on the side, if not put back in for another 10 min or so. Add the 1 cup rice, stir, then cook all at high pressure 6 minutes, manual release. Then spice it up a bit with some cayenne pepper, chili pepper,and cumin. You can change it up many ways by adding different spices. (You can even simply use a packet of taco seasoning.) Best served with cornbread or tortillas. Enjoy!
