Broccoli Soup has always been one of my favorite soups. This is a very creamy version, but without the use of any butters, nuts, or oils. All healthy, whole ingredients.
Ingredients:
1 small onion diced
3 med potatoes, pre steamed or baked
3 cups fresh broccoli.
1 cup fresh cauliflower
1 tsp minced garlic
1 tsp dried thyme
1 tsp parsley
1 tsp basil
2 cups water
1 cup unsweetened almond milk
3 T nutritional yeast
1 tsp veg bullion
Put in large skillet the onions to simmer, then add the minced garlic, simmer for a minute, then add the cauliflower, potatoes, broccoli, and water, .cover and simmer for 20 min. Remove half of mixture and put in your nutribullet or blender with one cup non dairy milk, veg bullion, and nutritional yeast. Blend until smooth. Add back to pan with the rest of the batch, heat thoroughly, add water to get your desired consistency, and serve with your favorite toppings. So healthy and delicious! This makes 4 servings, approx 170 calories ea.
