This is a refreshing side dish I like to serve in the summer. It is simple to make and sure to become a family favorite.
Ingredients:
2 crisp green apples, peeled and diced
3/4 cup of honey roasted pecans
1 rib of celery
1/2 cup craisins
Sprinkle of Sea Salt
Sauce:
1 Tablespoon of Honey
1/4 cup of non fat plain yogurt
2 Tablespoons of mayonnaise
1/2 lemon juiced
2 packets of Splenda (or regular sugar)
Peel and slice up the apples in bite size pieces. Put in bowl with a splash of lemon juice to keep them from turning brown. Add the chopped celery, honey roasted pecans and craisins. Add just a sprinkle of sea salt. Stir. Now put your sauce over the top, combine well. Cover and refrigerate for at least two hours before serving. This makes 4 servings approx 330 calories ea. Enjoy!
