Vegetable Curry with Vegetables and Soy Curls
I love a good curry, but I do not always love the extra fat and calories that come from adding the coconut milk. I save that for those special occasions. So if you would like to try a lighter version and equally as delicious, give this one a go.
Ingredients:
1 carton Veg Broth
1/2 Veg Bullion Cube
1 cup Soy Curls (Optional, but adds a real heartiness to this dish)
1 bag mixed frozen Cauliflower and Broccolli
1 cup chopped shredded carrots
1/2 cup chopped peeled zucchinni
1/2 white onion diced
1/2 red pepper sliced and diced.
1 stalk celery diced
1 can of Coconut Water
1 T curry powder
1/4 tsp minced Ginger
1/2 T minced garlic
3 T Jasmine Rice
S&P to taste
1-2 T all purpose Flour
1/2 cup non dairy unflavored Milk
Put Dehydrated Soy Curls in warm water and the veg bullion cube to rehydrate for 10 min, then drain the water, squeeze excess water out of them, and chop into small pieces.
In large saucepan put in the veg broth, cauliflower/broccolli mix, carrots, onion, garlic, zucchini, coconut water, curry ginger, garlic, rice, s&p. Bring to boil, then turn down to simmer, add soy curls, stir then cover and simmer for about 20 min, stirring occasionally. Then mix the milk with flour in small cup until dissolved. Pour into the curry, turn heat to high and stir constantly until thickened, turn off heat, cover and let sit for 5 min before serving. Loved this dish.
