Baked BBQ'd Tofu
Ingredients:
1 package extra firm tofu, rinsed, pressed, and sliced 1/4″ thick
For the sauce:
1 tsp onion powder
2 T tomato paste
1/4 teaspoon ground cumin
2 teaspoons tamari sauce
1/4 cup ketchup
3 T low sodium soy sauce
3 T agave or maple syrup
2 to 4 tablespoons sriracha sauce (Optional, depends how spicy you like it)
S&P to taste
Directions:
Preheat the oven to 425°F.
Put the tofu slices on parchment lined baking sheet, sprinkle with s&P,
Mix the sauce ingredients together well, add water a tsp at at time as needed to get the right thickness of sauce. (If you have a bottled barbecue sauce that you love, you can use that instead.)
Brush the marinade over the tofu slices and place the sheet in the oven. Bake for 20 minutes, then flip the pieces and brush with additional sauce. Bake for 20 additional minutes or until brown and crunchy. This makes 3 servings, approx 335 calories ea. I like to serve this with a large vegetable salad..
