I do the "Potato Diet" whenever I want to drop a few pounds, and this little nugget fits in perfectly. But honestly, they are good any time. I recommend making these in an air fryer for the ultimate crunch.
Ingredients:
2 cups mashed potatoes. (I prefer yukons, peeled, boiled, and hand mashed, nothing else)
1 T of Italian seasoning, OR chives, dill, basil, whatever herb you prefer.
1 T nutritional yeast
S&P to taste
MIx ingredients together with hands, and form into 1 tablespoon nuggets and put into air fryer, I usually make 8 at a time. Cook at 375 degrees for 25 minutes shaking a couple times. If they are not getting brown enough, turn heat up to 400 degrees the last 5 min. These are so good and crunchy, I just love them.
