As you have likely noticed, I love a good cobbler. Tonight I made a really tasty one with some very ripe pears I found at the farmers market. Bartlett Pears, my favorite. The pear is one of those fruits that many don't indulge in frequently, but what a delectable treat it is when baked.
Ingredients:
6 med Bartlett Pears, peeled and cut in med size slivers
3 T Maple Syrup
1/2 tsp Cinnamon
1 T Brown Sugar
1 cup chopped walnuts (or pecans, almonds, pine nuts, whatever you have)
Cobbler:
1 cup flour (whichever type you prefer, I used all purpose)
1 cup sugar, I like Sugar in the Raw
1.5 tsp baking powder
1/4 tsp salt
______
1 cup non dairy milk
1 tsp pure vanilla
Preheat oven to 425, mix top ingredients and put into baking dish, bake for approx. 30 min covered. While this is baking, mix together your cobbler ingredients, dry and wet separately then combine, add more liquid if necessary to give it a med thick milkshake consistency. After 30 min, (or however long it takes for your pears to get fork tender) remove pears from oven, and pour your cobbler mixture over the top. DO NOT STIR! Bake for an additional 10-15 min until browned. Serve as is, or with your favorite non dairy ice cream or vanilla yogurt. Enjoy!
