I am always looking for salads to add to my menu. I love salads, but it's easy to get bored with the same old salad all the time. This one is refreshingly different. The hearts of palm are broiled for a few minutes with some garlic and old bay seasoning to give them a flavor similar but not exactly like sea scallops. The combination of everything is a treat for the taste buds.
Ingredients:
1 can hearts of palm, rinsed and cut in 1/2 in circles
1 tsp minced garlic
1/2 tsp Old Bay seasoning

12 cherry tomatoes cut in half
2 spring onions, green part only
1 cup minced cabbage
1 cup minced kale
1 whole tomato, cubed
1 small red pepper, diced
2 T nutritional yeast
1 T granulated sugar or sugar substitute
S&P to taste
4-5 Tablespoons of your favorite low fat salad dressing, (I used fat free Italian)
Rinse and cut up the hearts of palm. Put in broiler safe pan. Add the minced garlic and old bay seasoning, and a sprinkle of salt and pepper. Stir to coat well. Place under broiler for 4-5 minutes stirring once. Remove as soon as they start to brown, and set aside to cool.
Combine all other ingredients in a bowl. After the hearts of palm have cooled, add to the mixture. Put your salad dressing over, and stir well. Refrigerate for at least one hour before serving. Enjoy!
