Oatmeal Chocolate Chip Cookies
We all need a special treat now and then, and this is a good choice. I've been playing around with a recipe for a bit and came up with the final product. A cookie that you love, but just healthy enough to not make you feel like you indulged in a "no no".
Dry Ingredients:
4 T Quick Oatmeal uncooked
2 T All Purpose Flour
1/2 tsp Cinnamon
2 T granulated sugar
1/4 cup chopped walnuts
1 T Baking POWDER (not soda)
1 pinch of salt
2 T of Vegan Chocolate Chips
Wet Ingredients:
1 small very ripe banana
1/2 T Pure vanilla flavoring
1/2 T of Olive Oil (optional, but gives it that cookie crunch)
2 T of Unsweetened Applesauce
Mix dry ingredients well. Set aside. Smash up the bananas well, put in microwave on defrost for just a few seconds if necessary to soften. Add the rest of the wet ingredients to the bananas. Mix wet ingredients with the dry ingredients and blend well. Drop 1 T cookies onto parchment paper and bake at 375 degrees for 15 min. Oven temp and time may vary, keep your eye on them, bake until golden brown on edges. Makes about one dozen med size cookies. So delicious!
