
It was a rainy day, which makes it a great day to experiment in the kitchen. I love cauliflower and have found many delicious ways to make it. I also love vegan crab cakes, so I figured I would try my hand at combining the two. What resulted was this delicious cauliflower crab cake, full of flavor, and holds together well. I topped it with a delicious Lemon Tahini sauce, and some hot Rooster Sauce. I hope you enjoy these as much as I did.
Ingredients:
Steam your riced cauliflower first, then set aside to cool a bit. In another bowl, mix together all of the rest of the ingredients except for the water. Add the cooled riced cauliflower and a bit of the water. Mix with your hands, and continue adding a little water at a time when you can easily form it into balls. Make patties approx 1/2 in thick. I got eleven out of this, but it depends on how big you make them, just don't make them too thick. Put on parchment paper or silpat and bake in a 350 oven for approx 45-50 min. Flip carefully a couple times. Serve with your favorite dipping sauce. I loved the combination of the Lemon Tahini with the hot Rooster Sauce. Each patty without the sauces is only 37 calories, and 2 net carbs. Healthy and delicious!
Tahini Sauce
Juice of 1 Lemon
3 Tablespoons of Tahini
4 Tablespoons of Water
Whisk all together until creamy, add more or less water as needed.
Makes 4 servings, approx 100 calories each, and 2 net carbs.
