So tonight I was craving stuffing, that's it... just stuffing. Main dish, only dish. Might not sound like a meal, but i loaded it up with mushrooms, onions, peppers, garlic, potatoes, carrots, cranberries, spices, and walnuts. It turned out so darn good, and my house smelled like Thanksgiving... in June!
Ingredients:
6 slices of whole wheat bread, toasted and cut into small squares
1 sm orange pepper, diced
1 sm red pepper, diced
1/2 med white onion diced
12-14 med mushrooms, sliced
2 garlic cloves minced
1 Yukon potato, peeled and diced
1 med carrot, diced thinly
1 rib celery diced
1 cup dried cranberries
1 cup chopped walnuts
3-4 cups water
2 bullion cubes
1/2 tsp poultry seasoning
S&P to taste
In med saucepan, add the peppers, onion, garlic, potato, carrot, celery, water, veg bullion, and seasoning. Simmer for 15 min covered, then add mushrooms, simmer for 10 more minutes. Add more water if needed. Then stir in the bread cubes, cranberries, and walnuts. It should be real moist, add water if needed. After well combined, pour into baking dish and bake in 425 degree oven for approx. 20-30 until well browned, and crunchy on the edges. Enjoy!
The dried cranberries add the perfect degree of sweetness.
