You can have your fritter and good health too. I was craving an apple fritter, but you know I just did not want all that fat in my diet. So I had an idea, and it turned out great.
Ingredients:
2 apples, peeled and minced
1 Tablespoon Brown Sugar
2 teaspoons sugar or sugar replacement
5 heaping Tablespoons of Self Rising Flour
2 heaping Tablespoons of quick oats
1-2 teaspoons of cinnamon
Dash of Pumpkin Pie spice
Dash of Salt
1/4 cup of eggbeaters
1/2 cup of non dairy milk
1 tsp of vanilla
I minced my apples up in the food processor, you need them to be well minced so they cook properly. Mix all ingredients together well. Adjust the liquids until you get the perfect consistency batter. Preheat your waffle iron. My waffle iron only has one heat setting, if yours has additional choices, choose a medium heat. Pour approx a half cup of batter in the center and close iron. Do not overfill or you could end up with a mess. It depends on the size of your waffle maker exactly how much you put in, but you'll figure it out. You may need to use a touch of spray oil to prevent it from sticking. Let cook until you no longer see steam coming out, mine took about 5 minutes. Top with your favorite syrup and enjoy! This makes 4 waffles, approx 140 calories each, not counting the syrup.
