HUMMUS WITH ROASTED RED PEPPERS AND GREEN OLIVES
Ingredients:
1 can of Cannelini Beans, drained and rinsed
1 can of Chickpeas, Garbaonzo Beans, drained and rinsed
3 large pieces of roasted red peppers canned in water. Remove from water, but save water.
2 T of Lemon Juice
1/2 T of minced garlic
1 tsp of Cayenne Pepper
1 tsp of Cumin
2 T Sriracha Hot Sauce
1/2 T of Onion Powder
2 T of extra water from canned red peppers
10-12 Green Olives stuffed with Pimentos
S&P to taste, keep in mind olives are quite salty.
Put all ingredients in food processer and process on high for about 5 full minutes. It should be very creamy when complete, if not add a bit more water or water from the canned red peppers. I found this to be an exceptional hummus. I did not use any tahini, or olive oil, just the real olives so you get the nutrition from the fruit, not just the oil. It makes about 8 large servings. You can eliminate the olives completely to make it fat free, but they really add a nice flavor. This hummus is a little spicy, but overall a pretty mild dip in my opinion, however if you are sensitive to spicy foods or just not fond of them, you may wish to eliminate the hot sauce, and the cayenne pepper.
