If you enjoy bread like I do, you are going to love this recipe. I played around with it for months trying to make it as healthy as possible. I love Focaccia, but traditionally it has a lot of olive oil on top to get that crunch. Although it is delicious with all that oil, it is not my typical and preferred way of eating. So, I fine tuned it. Now the only oil in this batch is the light spray of olive oil on the pan itself, and just lightly spray over the top right before going in the oven. I loved it, and I hope you do too!
Ingredients:
2 cups All Purpose Flour
2 tsp quick yeast (I use Fleischmanns Active Dry Yeast)
1 tsp sugar
1/8 tsp salt
1 cup +- warm water
Toppings
1 tablespoon minced garlic
10 cherry tomatoes sliced
10 olives sliced
Sprigs of Fresh Parsley
Sprigs of Fresh Basil
1 tsp Everything Bagel Seasoning
2 tsp grated parmesan cheese (Optional)
I like to mix up the dough the night before and let it rise on the counter all night, but you can also do a quick version and just let it rise for a few hours. No heavy kneading is necessary, just mix well adding bits of flour until you get the texture you like. Spread in your 9x9 baking pan and cover with saran wrap. Once it has risen to your liking, you will use your fingers and just poke holes to give it a good texture. I like to top mine with lots of things but the items above seem to have become my favorites, especially the garlic, tomatoes and olives. I like to score it with a pizza cutter right before baking so it is easy to just break off pieces. Bake at 400f for approx 20-25 minutes. Keep checking to make sure you don't burn it. The bottom, sides and top should all be lightly golden brown. You can serve it with many things, but we like to dip it in marinara sauce. We have actually made a meal out of it. I hope you all enjoy it as much as we do. This makes approx 4 servings, 295 calories each.
