PEACH COBBLER
Perhaps I should have called this a Fruit Cobbler as I used some strawberries and blueberries as well, but it is 75% peaches, so I will stick with the Peach Cobbler name. Now if you are watching calories especially your sugar intake, you may want to pass this one up....But if you like the occasional sweet treat, and it is practically fat free as I only very lightly sprayed the glass pan, go ahead and indulge in this one. It is very easy to make, and everyone will love it. It would be a great dish to take to a potluck! It would be wonderful served with your favorite non dairy whipped topping. You could change this up so many ways...not a fan of peaches? How about an apple cobbler? or a cherry cobbler? I have also made it using pineapple and strawberries and it was delicious. Use your imagination.
Ingredients for fruit
2 15oz cans of sliced peaches drained or use fresh peaches when in season
10 large ripe strawberries, sliced thinly
2 T blueberries (optional, use whatever fruit you have)
1/2 cup sugar
1/4 tsp of cinnamon
1/2 tsp vanilla extract
Stir ingredients well, until sugar is dissolved. Set aside while you make the batter.
Ingredients for batter/crust:
1 cup self rising flour
1 cup sugar
1 1/2 tsp baking powder
1 dash of table salt
1 cup of unsweetened almond milk
1 tsp vanilla extract
dash of cinnamon
(Whisk dry ingredients together first, then add your milk and vanilla.)
Mix both ingredients separately. Then lightly spray a non stick 9x12 pan or use a non stick Teflon or ceramic dish. Pour 75% of the canned fruit ingredients over the bottom. Then pour the batter over the top. (DO NOT STIR!!) Dollop the remaining fruit over the top, and again...Do Not Stir.
Place in preheated 350 degree oven for 45-55 min. Keep checking, when med golden brown on top, remove from oven. Let cool and serve.
*if you prefer using all fresh fruit, prebake it for 15-20 min covered prior to adding the cobbler crust.
