
This recipe evolved from wanting something significant to put on my salad, and by "significant", I mean something that will stick to the greens and vegetables. I took some of my leftover creamy cashew cheese that I had used on my pizza the night before, and simply added some water, a tablespoon of sunflower butter, and a touch of balsamic vinegar. Delicious result!
Ingredients:
12 oz raw cashews
2.5 T lemon juice
1/2 tsp garlic powder
3/4 tsp onion powder
3/4 cup warm water
1/4 tsp salt
1/4 tsp pepper
1/4 tsp all purpose seasoning
1 T balsamic vinegar
1 T tahini or sunflower butter
Blend all ingredients as needed, add a few T's at at time of the water to get the consistency you like. Chill for one hour, then serve over your favorite salad concoction. Shown is Red Cabbage, Kale, green onions, tomatoes, air fried tofu, and peanuts. Delicious!
