Prior to going plant based years ago, I used to love egg salad. I know, I know... but it's true! I find this easy to make dish to be a delicious alternative. I keep it real simple here with just a few simple ingredients, but you can spice it up however you like. I think you will enjoy it very much.
Ingredients:
1 block of tofu, drained and pressed for about an hour.
2 ripe avocados, pitted, peeled and diced
2 ribs of celery finely diced
1 small onion finely diced
S&P to taste
After pressing your tofu to remove the excess moisture, take your hands and shred it up in a bowl. Add the avocados, then take a fork and mash briefly to the combination and make sure there are no large pieces of anything. Then add your onions and celery, along with approx. 1/2 cup of Vegan Mayo, Salt and Pepper as desired. Cover and refrigerate for at least one hour before serving. Very creamy and delicious. I especially enjoy this with my Seed Crackers.
