TOFU SCRAMBLE TACOS
Start your morning right with this delicious scrambled tofu. Consider this your basic recipe you can change up so many ways.
Ingredients:
3/4 block of tofu, drained and pressed
1 small red pepper, finely diced1
/4 of white onion, finely diced
5 small mushrooms, sliced thin.
1T of nutritional yeast
1/4 tsp of turmeric
1/4 tsp curry powder
1/2 tsp Black Salt (Kala Namak, OPTIONAL)
2 T Salsa
Salt and Pepper to taste
Start off by sauteeing your onions, mushrooms, and peppers in a pan with a little water or veg broth, no oil is necessary. Once they start to soften add the rest of the ingredients, you will want to crumble up the tofu so it resembles scrambled eggs. The black salt adds a real eggy flavor to the tofu, but you can still make a great tofu scramble without it, I prefer without it but some swear by the black salt. Continue cooking for about 7-8 min on med heat stirring occasionally and adding T of water as needed to keep it from sticking. I enjoyed this spooned into some toasted white corn tortillas.
