If you enjoy a mild white fish, Halibut is for you! It really absorbs the flavors when you marinate it, even for short periods of time. Here is a simple and delicious way to prepare it that my husband and myself really enjoyed.
Ingredients:
2 large skinless Halibut Fillets
2 T of minced onion
8-10 grape tomatoes sliced in half
1 Tablespoon minced garlic
1 fresh squeezed lemon
2 tsp dry basil, or 2 T fresh basil
Salt and Pepper to taste
Place thawed Halibut fillets in your air fryer. Squeeze 1/2 of the lemon juice over top and bottom. Let it sit and marinate in the lemon juice for approx 15 min. Top with garlic, onion,, basil, salt, pepper, and lastly, the sliced tomatoes. Turn on air fryer to 400 degrees and cook for 10-15 min, depending on the thickness of the fillet. It should be flaky and opaque when complete. I squeezed the rest of the lemon juice on top just before serving. This was just incredible. I served with a wonderul salad with some tahini and reduced balsamic drizzled over the top. Give this one a try!
