
.Sometimes you just hit on the right combination of delicious foods and you know you will be making it over and over again. I loved this light dinner. We were not super hungry, so the amount was perfect, but you could certainly add a bit more for a fuller meal.
Ingredients:
3-4 Cod Fillets, fresh or frozen
1 large lemon
1 tsp garlic powder
1 tsp fresh or dried herbs (I used a mix of dried herbs including thyme, basil, and onion)
Salt and pepper to taste

4 cups of fresh green beans, rinsed and cut tips off if needed
6 large white mushrooms sliced
1/2 white onion diced
2 green onions -, cut with scissors into small pieces including the white part.
1 slice of red or yellow onion diced
2 T of low sodium soy sauce
Salt and Pepper to taste
Preheat oven to 400 degrees. Place fish in a casserole dish and squeeze half a lemon over the top, sprinkle your seasoning over the top, add a few slices of the lemon, and set aside. When the green bean dish below is halfway done, you can put the fish in the same oven, 10 minutes covered, 8 minutes uncovered or until opaque and flaky.
Put all of your green beans into a good sized casserole dish. Add the mushrooms, onions, pepper, soy sauce, salt and pepper, and stir to combine. Put lid on dish and place in oven covered for 20 min, then uncovered for approx another 10 min. Sample the green beans until they are done the way you like them. These still had a little bite left in them.
Enjoy! A little tartar sauce is great with the fish, or simply eat it plain like I do. The lemon flavor is divine. My suggested topping for the green beans is a sprinkle of sliced almonds.
