
Tzatziki
I think you will agree after tasting this, it will become a favorite. The taste is so refreshing, and goes great on a sandwich, or as a dip. I like to roast some vegetables in the oven until tender, then dip them in this. It is so good, low in calories, and full of nutrition.
Ingredients:
3 tablespoons plain unsweetened yogurt
1 tablespoon mayo
1/2 of one peeled and diced English Cucumber
1/2 small white onion diced
1 tsp minced garlic
Half of one lemon squeezed.
1 tsp dried dill.
1 tsp sugar or sugar substitute (optional)
S&P to taste
Mix all ingredients well, refrigerate for at least an hour and serve. So darn good. The vegetables I just chopped into bite size pieces, and roasted for about 45 minutes in the oven. I spiced them up a bit with Italian seasoning. I hope you enjoy! This makes two servings approx 70 calories each.
