ITALIAN CASSEROLE
This one seems to be a favorite at my house. Very easy to throw this together on a weeknight, pop it in the oven and serve with some crusty bread and a side salad. Yum!
Ingredients:
2 8 oz jars of tomato sauce or large jar of Prego Heart Smart Light, (it's fat free)
4 cups *No Egg Pasta Ribbons (uncooked)
16 oz can of Rotel Diced Tomatoes Original
4 cups fresh sliced mushrooms
4 cups fresh baby spinach
3 ripe red tomatoes sliced thin
1/2 diced green pepper
1/2 white onion diced
1-2 tsp Italian Seasoning
1 tsp garlic powder
1/4 cup chopped fresh Basil and Parsley
1/4 cup Nutritional Yeast (optional, but I love it)
*or use your favorite pasta
Layer like a lasagna. No need to precook the pasta, it cooks just fine without it. Just make sure there is plenty of liquid in the dish, if not enough tomato sauce to cover all the noodles, add water. I layered sauce, spice, noodles, mushrooms, onions, peppers, spinach, tomatoes, mine held two layers, about a 10" round 3" deep. Bake for 35 min covered at 350, uncover, and cook at 400 degrees for another 40 min. Temp and time may differ, keep checking. I sprinkled liberal amounts of the nutritional yeast on top of mine before and after baking, but that is optional.
This recipe as noted above is very low fat, healthy and delicious, if you are not concerned with fat content, or are looking for a more decadent treat for a special event, try a layer of vegan shredded cheese, or my favorite, Cashew Cheese. Use your imagination.
