SLOPPY JOES
I was craving some good old fashioned sloppy joes tonight and you know how it is... I just had to make them. Vegan style of course. So here is a super easy recipe providing you have made your seitan in advance. If you haven't any seitan, set aside a couple hours and make a huge batch and save it in 1lb servings to add to recipes (when you make setian, you really want to make a bunch so you can make all sorts of things with it later.)
3/4 lb finely diced Seitan (about a third of a Seitan roll sliced thin and chopped finely)
1/2 chopped white onion
1 med chopped green pepper
1 8 oz can of red kidney beans drained and rinsed, then smashed with fork
1/2 t salt
1/2 t pepper
1/2 t garlic powder
1/4 to 1/2 cup of your favorite BBQ sauce (or more if you wish)
Saute the onion and green pepper in water in a frying pan for about 8 min. Keep adding T of water as needed to keep it from sticking. Then add your spices, Seitan and simmer adding water as needed for about 15 min. Then add your smashed beans and BBQ sauce. Heat over low heat stirring frequently for about 5 min until heated through. Feel free to add more bbq sauce to your own taste, make 'em good and sloppy! Serve on lightly toasted whole wheat buns. So good! This makes 4 good size sandwiches.
