Well, here is an old favorite turned plant based. No, they are not exactly like deviled eggs, but they are just as yummy in their own special way. Give these creamy delicious treats a try for your next family gathering, but you may want to double the recipe, they will go fast!
Ingredients:
8 small red potatoes
____________
1 can chickpeas or other white beans, drained and rinsed
2 T Lemon Juice
1-2 T yellow mustard (depends how "mustardy" you like it, I just used 1)
1/8 tsp turmeric
1/4 tsp of garlic powder
1/4 tsp of onion powder
1/2 tsp of dried dill
1 dash of Black Salt, Kala Namak. (optional ingredient, use 1/8 tsp or less, it has a strong eggy flavor)
S&P to taste
Garnishes: Smoked Paprika and Scallions
Put potatoes in water to boil, or steam until tender, approx. 20 min. Remove from heat and immerse in cold water to stop cooking. While they are cooking put rest of ingredients in blender or food processor and blend until creamy. When potatoes are done slice in half, scoop out middle, then fill with the hummus mixture. You can then sprinkle with smoked paprika and the scallions, or garnishes of your choice. Warning: These are addictive! :)
They can be served hot, warm, or cold, which makes it nice for taking to potluck type gatherings.
