If you like a sweet and creamy dressing, this one is for you. I whipped it up one night just making with what I had on hand, and loved it. So I fine tuned the flavors a bit and decided it was worthy of sharing. I hope you like it as much as I do.
Ingredients:
3.5 oz of extra firm tofu (about a 1/4 of a block)
1/2 of a ripe avocado
2 tsp of apple cider vinegar
1 tsp lemon juice
1 tsp Italian seasoning
2 tsp of sweetener of choice (I used Splenda, but you could use sugar, maple syrup, agave etc)
1/4 cup water
S&P to taste
Put all ingredients in nutribullet and blitz for about a minute. Add more water if it is too thick. I used all of this on my huge salad and made it a meal, but it should be plenty for two smaller salads. 2 servings, 115 calories ea.
