
It's always fun to come up with new ways to enjoy our vegetables. This one is a winner! It tastes great and can be changed up in many ways by adding different spices, and vegetables. I'm keeping this version pretty basic, because it is super easy to make, and you will usually have everything you need in the pantry.
1/3 head of Cauliflower (chopped up finely)
1 small handful of shredded Carrots
1/4 of red onion diced
2 Eggs
1/4 cup Flour (I used Almond Flour, but use your favorite)
S&P to taste
Pinch of Garlic
Combine all ingredients in a bowl and mix well. Drop by scoops in a non stick pan, (you may need to use a touch of olive oil spray to keep it from sticking). Depending on the size of your scoops, cook covered for 10 min on low heat, then flip carefully, turn up heat to med and keep flipping uncovered every 2-5 minutes until they reach your desired brownness. Serve with your favorite dipping sauce. So delicious! I made good large size patties with mine and got 3, but you could easily get 4-5 by making them smaller. If serving a family, double the recipe.
