Holy cow, this was good. I had to stop myself from eating the whole pan. Super easy recipe I came up with just using what I had in the home.
Ingredients:
4 peeled and sliced apples (I used Gala)
3 peeled and sliced pears (I used Bartlett)
1/2 tsp pumpkin pie spice
1/4 cup Maple Syrup
2 T Brown Sugar
1 T Sugar
1 cup chopped walnuts
1.5 cups toasted* sweetened shredded coconut
Preheat oven to 400 degrees. Stir together the apples and pears with the syrup, sugar, spices, and half the walnuts. Bake covered until tender, (mine took about 35 minutes) Uncover and top with the shredded coconut and the rest of the walnuts and bake until golden brown on top. Let cool a bit and serve warm. I really enjoyed with just a drizzle of Silk Vanilla yogurt over the top. This should make 4 servings unless you can't stop yourself and eat the whole pan without sharing...
* I happened to have some toasted coconut on hand leftover from when I made my granola mix. You could probably just put regular sweetened shredded coconut on top, it will just take a bit longer to brown.
