
What a great way to preserve food for the future or to create delicious dehydrated snacks to enjoy right now! I don't have any real recipes for dehydrating foods, but have been dehydrating up a storm. For the most part, you cannot over dry things. They will last the longest when every drop of moisture has been removed. I dehydrate a lot of frozen vegetables. Why, you ask? Well... let me tell you. We live in hurricane country here in Florida and have had to endure weeks without power. I have lost everything in my refrigerator and freezer more times than I can count. Now I only keep about a weeks worth of food in the fridge and freezer during the hurricane season. The rest of my storage food I prefer pressure canning or dehydrating. Then I will always have delicious food whenever I want it, even when we have no power. I can easily reheat canned items on the propane grill as well as the dehydrated items after hydrating. If you would like to try your hand at dehydrating I would recommend you start with frozen vegetables. They are easy, shown above is a frozen mixture of corn, peas, carrots, and green beans. You simply put them in overnight at least on low heat, and if they are still not dry keep going until they are good and crispy. Frozen vegetables are already blanched before they were frozen, but many fresh vegetables you will need to blanch first. One of my favorite snacks I have made is dehydrated pineapple. They are so easy and delicious. I also love to dehydrate kale, basil, and most recently green onions. (Video link below) So don't be scared of dehydrating, you will figure it out real fast. Enjoy!
