When you just need something healthy and filling to tide you over until dinner, or just need a healthy snack, this could be your "go to" dish. This bean dip goes very well with some fresh vegetables.
Ingredients:
1 can 15.8 oz Great Northern Beans, drained
1/4 cup raw cashews
1/4 of medium yellow onion diced
1 rib of celery diced
1 T of minced garlic
1 tsp of Italian seasoning
3 T of nutritional yeast
1 small hot chili pepper
4 leaves of fresh basil
1/4 cup +- of water
2 T of lemon juice
Salt and Pepper to taste
1/4 tsp of sugar or sugar substitute
Put all ingredients (only put half the water in first then add T as need to get your preferred thickness) in a high speed blender or nutribullet and blitz until creamy. Mine took just about 2 minutes. Refrigerate for at least one hour prior to serving. I like to garnish it with some scallions, freshly ground black pepper, and a sprinkle of dried chili peppers. This makes 4 servings, approx 160 calories ea.
