MUSTARD HUMMUS
Here is a delightful low fat hummus perfect to use as a sandwich spread with your veggies, or as a delicious dip for veggies, chips or pretzels. Enjoy.
Ingredients:
1 can chickpeas or other white bean, drained and rinsed
5 large pimento stuffed green olives
1 whole lemon, juice only
3 T yellow mustard
1/2 t garlic
1/2 t onion powder
1/4 cup water
S&P to taste
Put all in blender and blend until very creamy, your time may vary, my nutribullet took about 2 minutes. Add water if necessary to get desired texture. For an even creamier spread, (but a bit higher in fat and calories) add a 1/2 cup raw cashews to the mix that have been soaked overnight. I sprinkled a dash of smoked paprika on top of mine, use your favorite garnish.
