Sometimes I still crave the taste of the ocean. Not that I actually want to eat fish or other seafood, but the flavors that I associate with it. This dish really satisfies that craving. It is a light and refreshing salad. Traditionally Ceviche is made with raw fish, my preferred substitute in this recipe is Artichoke Hearts, but you could also use Hearts of Palm. I like to broil the artichoke hearts slightly, then cool before adding to the salad, it will remove the brine taste that it sometimes gets from the canning process.
I hope you enjoy this one as much as I did. There is a lot of chopping involved but it is a very easy recipe. If there is any ingredient you don't like, simply leave it out or substitute with something else.
Ingredients:
1 12-14 oz can of Artichoke Hearts (or hearts of palm)
10 (or about 1 cups) cherry tomatoes sliced in half
1 small rib of celery diced
1 lime, juiced mixed into 1 tsp of sugar of your choice
1/4 of small red onion, diced
1 small yellow pepper, diced
1 Avocado, peeled, deseeded, and diced
1/2 tsp +- Old Bay Seasoning (Important ingredient, don't leave this out)
1/2 tsp dried dill
1/4 tsp Italian seasoning
1 tsp Cilantro or Parsley
S&P to taste
Drain the brine from the artichokes, and rinse thoroughly. Chop roughly and place in broiler to slightly sear and sprinkle it with the Old Bay Seasoning, use the juice of 1/2 lime and it will add a good flavor at the same time. Set aside to cool.
Mix the rest of the ingredients together in large bowl and put the rest of the lime juice over the top of it, add your hearts of palm and stir well, Refrigerate for 2 hours and serve as a light and refreshing side salad. The lime should prevent the avocado from turning color, or you can always add the avocado right before serving. Enjoy this light and delicious salad!
