
Cabbage Salad
Well, here is an easy dish, great to take to potlucks, or just a nice side at home. Quick and easy to make with just a few fresh ingredients.
Salad: 3 cups shredded cabbage (I think red is prettier, but green is shown too)
1 cup shredded carrots
1 cup craisins or raisins
1/2 large diced onion, (I used red, but white is fine too)
1 cup peanuts or cashews
Salt, pepper, and spice to taste.
Sprinkle of sugar
Dressing: 321 Sauce
3 parts balsamic vinegar
2 parts spicy mustard
1 part maple syrup, (or any other sweetener, agave, etc...)
Shake together dressing ingredients well, and refrigerate.
Combine the salad ingredients, top with 1/4 cup 321 Dressing, toss well, and refrigerate for one hour. Serve and enjoy!
I was inspired to make this because of a recipe I saw on facebook from Kathy Caulfield. She used red cabbage, raisins, and cashews and it was even prettier. She also used a chili oil instead of the 321 dressing. Many options with this one. Use your imagination and eat food that is not only great tasting, but also very pretty.
